When in "exposure simulation", the monitor is showing you what the video WOULD look like if exposed at 1 second instead of 1/30th. If you were to press the record button, you would notice that the exposure would increase to 1/30th and the image would be darker. Even though the LCD is telling you that you dropped to 1 second, and the screen is showing you the exposure change, but you are not really shooting at anything under 1/30th.
